- Ingredients:
- 1 cup almond flour
- 3/4 cup oat flour
- 2 tablespoons coconut flour
- 2 tablespoons baking powder
- 1 tablespoon cinnamon
- 2 large eggs
- 1 cup non-dairy milk (I use coconut-almond)
- 1/4 brown sugar
- 3 tablespoons honey or agave
- 2 tablespoons cocoa powder
- 3-4 tablespoons applesauce (optional)
- 3 tablespoons vanilla
- 1 tablespoon almond essence (optional)
In order to create this cake you don’t need an electric mixer, in fact I prefer not to use one and I feel the outcome is better. Firstly, combine all the dry ingredients almond, oat and coconut flour, baking powder, cinnamon, and cocoa powder.
Mix eggs and sugar in a bowl, milk, vanilla, honey or agave, and almond essence. Combine the wet and dry ingredients in a bowl and mix until smooth enough consistency.
Preheat oven to 375, grease cupcake pan. Portion out each cupcake to be even, should make 12. Baking time is about 20-25 mins, however, monitor for consistency as they tend to be more moister than when using white flour.
